Eggplant & Chickpea Coconut Curry over Rice (w/ option to add Chicken!)

What's up?  Healthy, hearty, hell yea. I was skeptical, about this dish, but once I tasted it... wow.  Deep, beautiful, layers of flavor. You can make it as spicy as you like it, and then cool it down with some yogurt.  Winner.
Bundle Contents: fresh diced eggplant (packed w/ a sprinkle of fresh lemon juice to reduce browning), diced tomato, diced onion, minced garlic, fresh ginger, minced green chilis, organic coconut oil, coconut milk, cumin, coriander, salt, pepper, jasmine rice, all natural butter & all natural yogurt (both optional), and optional all natural antibiotic free chicken breast
You'll Need:  range/burners, one large pan, one medium pot, mouths, appetites
Cook Time: about 35 minutes
