Spinach, Brie and Cranberry Stuffed Dijon Chicken With a Roasted Veggie Quinoa

What's Up? This dish comes together very nicely.  The brie, cranberries, spinach and dijon work together wonderfully and the veggie quinoa is a perfect accompaniment.  Squeeze a little lemon juice on top and you've got a fantastically quick, simple and delicious dinner!
